Muffin Tin Meat Loaves
1 1.2 pounds lean ground beef
1 egg, slightly beaten
1 1.2 cups shredded zucchini
(about 1 medium zucchini)
1 teaspoon dried Italian seasoning

1.2 teaspoon salt
1 cup bread crumbs
1.4 cup ketchup

Preheat the oven to 400 degrees.

In a large bowl, combine all the ingredients except the ketchup, mixing lightly but thoroughly.

Place about 1.3 cup of the beef mixture into each of 12 medium muffin cups, pressing lightly; spread ketchup over the tops.

Bake for 20 minutes, or until no pink remains and the juices run clear.
